As I was consuming a Red Velvet Vixen Cupcake, I was wondering why it was red in the first place. Well, there were two possible explanations for the red color of the cupcake dough. The easier explanation was that a food colorant was added. The common ingredients of Red Velvet Cakes are buttermilk, butter, flour, cocoa, and either beets or red food coloring. The other but more chemical explanation to why the Red Velvet Vixen Cupcakes at Sonja’s were red is due to the known chemical reaction of how acidic vinegar and buttermilk tend to reveal the red pigment Anthocyanin within the cocoa when mixed together. It is also said that more alkaline or basic types of cocoa tend to produce a more pronounced red color to the dough. Hmm..interesting, I learned something new from eating a cupcake!

Other than the special info about Red Velvet Cupcakes and why they look like that, I do recommend getting a taste of one before Cupcakes at Sonja’s runs out of them. The Cream Chesse flling makes this cupcake delightful to eat as it is perfect with the flavor of the red cupcake dough. The ladies at the counter of Cupcakes by Sonja said that it’s one of their bestsellers there.
I love cupcakes! I’ll do reviews from Sonja’s and other bakeshops once in a while when I also have the budget without losing track of my diet! LOL.
